Ashta Lebanese cream with milk and rose hips

Today's recipe is an irresistible combination that delighted the whole family.

This recipe actually comes from a dessert served in Lebanese restaurants, with banana slices, pistachios and honey, rose water and orange, called Ashta or Kashta.

When I tasted the jar with  Rose Melinis, my mind flew straight to the dessert I was telling you about above, but instead of banana slices I used Rose Melinis, thus accentuating the rose flavor of the preparation.

That being said, now I invite you to delight your taste buds with this sugar-free dessert, with soft rose flavors combined with honey.

INGREDIENTS

  • 500 ml milk
  • 200 ml liquid cream (I use Ken of 38% fat)
  • 45 g starch corn
  • 40 g sweetener (green infant)
  • 4 lg cold water
  • 3-4 lg orange blossom water
  • 3-4 lg rose water
  • Melinis rose
  • Pistachios chopped

INSTRUCTIONS

  1. Bring the milk and cream to a boil.
  2. Meanwhile, put the starch, sweetener, and water in a bowl and stir to dissolve.
  3. When the milk and cream show signs of boiling, add the dissolved starch with the sweetener and stir vigorously with a whisk.
  4. Let it boil for 2 minutes, while continuing to stir and add the orange and rose flower water.
  5. Immediately transfer the cream into containers and refrigerate for 3 hours.
  6. When the pudding is cold, add rose hips and chopped pistachios.
